The thing is the cursor does not appear all the time.
The cursor appears when the pen tip is on the canvas, e.g. while drawing. When the pen tip goes over buttons or menus, there may or may not be hover effect.
And because the cursor does not appear all the time, you can't rely on the external display to click on certain things because there's no cursor so you don't know what you're clicking on. So you will still have to look at your iPad display to click on certain things.
Also, iPad will have to use mirror mode to let you use it as a tablet. The display will always be on, but you can lower the brightness to save power.
